Things to see on a road trip through Oregon?

I live in Northern California and I'm planning a week long road trip through Oregon sometime this year (probably in the fall.) It's been a long time since I've been to Oregon so I was wondering if anyone could recommend some fun things to do and see and maybe some places to stay along the way. I know I want to go to the aquarium in Newport, swing by Sea Lion Caves or Oregon Caves (my husband has never seen either), and spend a day or so at the Gorge. I don't drink so I'm not interested in the wineries or breweries and I don't really like big cities. If anyone has any suggestions or ideas I would love your input. Thanks!
